Vietnamese spring roll dipping sauce

The perfect accompaniment to almost any Vietnamese dish but especially summer rolls. I particularly enjoy prawn summer rolls with this sauce. Its fresh, spicy and full of flavour.
Ingredients
3 tbsp fish sauce
3 limes, juiced
1 tbsp of brown sugar / agave / honey
1 garlic clove minced
1 thumb of ginger finely chopped
1 Chili (green or red) finely chopped
Method
1. Finely chop your chilli and garlic
2. Put all the ingredients in a small bowl and mix together ** if you’re feeling lazy, use lazy chopped garlic or ginger. 1 tbsp of each is perfect
